This Saturday, we visited the Phoenix Open Air Market and talked to Brian Hines about his business, The Proper Beast. He taught himself to cook as a “distraction” from the stresses of his job and now supports himself by selling sausage at three markets, including the Phoenix Open Air Market, the Gilbert farmers’ market, and the Ahwatukee farmers’ market. He talked to us about how he makes sausages using naturally-sourced ingredients. The family farm he gets pork from does not use fillers, preservatives, or antibiotics. His three-person team hopes to expand into a kitchen. |
